: a crystalline, sweet alcohol C12H24O11 that is a polyol which occurs naturally (such as in roasted malt and the leaves of chicory) or is produced commercially by the hydrogenation of maltose and that is used as a sugar substitute in reduced-calorie or sugar-free food products (such as candy, baked goods, and ice cream)
